Honey and Lime Glazed Fruit Salad with Mint

 

Summer means grill-outs and picnics. Impress your guests and family with this delicious and nutritious fruit salad with honey lime dressing on top and chopped up mint for some extra flavor power.

Fruit salad is “yummy yummy” to say the least and better yet, so easy to make! All you need is fresh fruit, your Great Lakes Bee Company Honey, mint leaves, a cutting board, and a knife. This recipe would also work great with our Lavender infused honey (available at The Rockford Cheese Shop) or any other of our infused honey flavors like blueberry, lemon, rose, orange, or apricot just to name a few.

This recipe could be altered to include more fruits of your own choosing or less! You could pick one fruit and drizzle one of our infused flavors over it. We’d recommend mangoes with habanero honey, blueberries with lemon honey, raspberries with chocolate honey, honeydew with rose honey, apples with cinnamon honey, oranges with bourbon honey- the possibilities are endless!

Ingredients: 

1lb strawberries sliced

12oz blueberries

12oz red grapes sliced

4 kiwis sliced

3 mangoes sliced

2 bananas sliced (optional)

1/2 fresh pineapple sliced

1/2 cup GLBC Honey

1/4 cup lime

1/4 cup fresh chopped mint leaves 

Instructions:

  1. Wash fruits prior to slicing an dicing
  2. Place sliced and diced fruits into a large salad bowl (saving banana for last)
  3. Whisk together honey, lime, and chopped mint
  4. Pour the mix over the fruit bowl and stir
  5. Stir juices again before serving

If the honey mixture is too thick, add more lime juice or even a splash of water. Be sure to add the banana right before serving, should you choose to include this ingredient. The banana will brown otherwise. This recipe is best when prepared same day as serving. It can even be served alongside a dessert such as cheesecake.
